EZ Sweet Potato

I am going to start posting about easy recipes every once in a while. Although I'm a foodie, unfortunately I am not fond of cooking (the last thing I want to do when I get home from work is cook a messy feast for just myself!)...... so I am always looking for recipes that are fast, easy, have very few ingredients .. and are hopefully healthy too!

Lets look at this twist on a Sweet Potato that I found on a blog. Sweet potatoes are very good for you- they are high in Vitamins B6, Vitamin A, Potassium, and they also contain Vitamin C, Magnesium, Biotin, Calcium and Iron! They are also low in calories (a medium sized sweet potato is around 130 calories) and they are high in fiber and protein- so it's super filling!

Here's an idea.. you can bake a sweet potato, fill it with cottage cheese, and ad some.... KETCHUP! Yes, ketchup. It sounds gross to add to the combo but trust me it's delicious! The combo of sweet and salty is awesome and with the ketchup added, it reminds me of eating sweet potato fries but a wayyy healthier version!

Follow these easy peasy directions to try it for yourself:
  • Pierce a sweet potato with your fork in a few places. Place a sweet potato straight on the rack in your oven. Fold tin foil into a little tray on the rack below to catch any juice that falls off the potato during the cooking process. 
  • Skip the preheating process. Set your oven to 400 degrees and let it bake with the potato already inside. Bake for an hour if the potato is on the larger/ medium side.. if it's a small sweet potato then bake for 45 minutes. 
  • When the hour is up, remove the potato, open it and mash it. Add the cottage cheese on top. Add some salt and pepper and then sprinkle your glorious KETCHUP!
  • Enjoy your healthy feast!

Spring Break Wake Up Call

This month many students are enjoying their SPRING BREAK! What is too funny is the unique way that the Panama City Beach Holiday Inn wakes up the Spring Breakers who stay there every year. 

Every morning at 11 a.m. the hotel blasts the Lion King's "Circle of Life" song as a hotel-wide wake up call. The hotel has been using this song since 2012 and it has become their spring break ritual. Hotel employees say that hundreds of people have called in this year to make sure that the hotel is still playing the Circle of Life! 

Phillip Covin, director of marketing at the Holiday Inn, says the song "worked real well because of the beat in the song and because the song fits what the kids are going through right now." The hotel used to play popular pop or hip hop songs to wake up their residents until their DJ decided to try something new- and it became a huge hit! Each morning the hotel residents gather on their porches while the song plays.

The Pour House: Charleston

When I was in Charleston I went to this cool bar and music venue called The Pour House! What makes this bar, which has live music every night, so special is that it's completely covered in local artists' murals! Even the bathrooms are covered in remarkable art!

Every year they have a contest where artists will paint murals on the walls and deck- they have a big party/ concert while the artists are painting and then onlookers can come by and vote on their favorite mural! The artists win cash prizes, etc. and their art remains up for all to see! 

This is really a GENIUS idea because you get your venue completely painted for FREE! Each mural really is spectacular and since the bar is also a music venue, many of the artists incorporate the music theme into their artwork! Here are some pictures of the impressive murals.. I was really blown away ...enjoy!!

Return to Charleston

It was a fabulous weekend trip to Charleston! It was so great to see my girls for a weekend getaway!  I am pretty worn out from all the traveling on airplanes, etc. so I wont be posting much today but I have a fun Charleston post coming up later this week so check back later! Above is Maggie's adorable house in Charleston where I got to stay for the weekend! It is in West Charleston which is very close to downtown and is the big up-and-coming area for the city. The architecture in Charleston reminds me so much of New Orleans.. it all is so historic and has so much charm!

In My Carry On...

I am so excited because I am going to Charleston this weekend-- time to par-tay!! Two of my best girlfriends recently got engaged so I will be hopping on a plane to see them and the rest of my Charleston faves! 

Charleston has always been one of my favorite cities and there is always so much to do there! Maybe I'll even see some of the cast of Southern Charm while I'm there ;) 

Anyways, since it's just a weekend trip I will just be bringing my purse and a carry on suitcase-- I will be doing everything to avoid checking any bags! When traveling alone, once I've finally gotten to my destination I absolutely hate waiting on my luggage in the baggage claim! If you haven't heard, the TSA changed their size requirements for carry on luggage last year- so you now should go by these dimensions regardless of the airline:  22" long x 14" wide x 9" height.

After a lot of research I found this carry on suitcase at Target which seems to be within the size limits. It is on sale and has gotten great reviews! But if Southwest makes me check my bag, then back to the store it will go! I will let you know if it doesn't work but it looks like it will be fine!

Here are some things I will be bringing with me in my carry on luggage:
A blanket scarf like the one above is fabulous for a flight because you can use it as a blanket or a shawl if you're cold! My slippers (above) from Target don't even look like slippers when you wear them with pants so they're super comfy in the airport! I love my Tory Burch flip flops and even through it's gross walking through the security checkpoint barefoot, they keep me from overheating while hustling from gate to gate (plus I will be en route to the beach!!) The cardigan above from Nordstrom is on sale and can be worn 2 different ways and it's really comfy!

Happy St. Patrick's Day!

Happy St. Patrick's Day, everybody! You better be wearing green so you won't get pinched! 

St. Paddy's Day has always been one of my favorite holidays! We already celebrated St. Patrick's Day this weekend at the Greenhouse Bar in Green Hills! It was my 6th year to attend their annual St. Paddy's Day party and it keeps getting bigger each year!

The Jinx: Robert Durst

I already had a post set for today because I had figured I wouldn't have much to write about over the weekend, but I was wrong! Last night I saw the finale of the HBO 6-part documentary series, The Jinx: The Life and Deaths of Robert Durst..... and it was definitely the craziest documentary I have EVER seen! It is about the millionaire New York real-estate heir, Robert Durst, who had been linked to three murders but never convicted. His wife, Kathleen Durst, was murdered in 1981, his best friend Susan Berman was murdered in 2000, and his neighbor was murdered in 2001. 

What is the craziest news of all is that Durst was just arrested on Saturday (the day before the finale) in a hotel in New Orleans--- because of the evidence that was recovered while making the film!!!!

While creating the film, the filmmakers uncovered more evidence linking him to the murder of his best friend, Susan Berman. This is a victory for all documentary film makers and journalists everywhere!  They really are heroes and were able to do what police in three different states were unable to accomplish! 

Robert Durst is in court today over the new charges. This has been all over the news today and I was lucky enough to catch an interview with the director on Good Morning America before leaving for work.... watch the interview with the director of The Jinx, Andrew Jarecki, here!!!

I had watched Robert Durst's story on a Dateline or 20/20 episode before I saw the documentary, so I was familiar with his murderous accusations. It is funny because as you watch the documentary series you grow attached to Mr. Durst, because he is in a strange, creepy way likeable. 

I almost felt sorry for him at times and then wondered why!! He has a sense of humor and is polite and somewhat kind, which makes you for moments forget that he is accused by many police departments of being a SERIAL KILLER! 

His pride and desire for attention is what got himself re-arrested! Who participates in interviews for a documentary when you were accused/acquitted of three murders? He did all of these interviews against the advice of his attorneys... craziness! I think he clearly loves the attention, recognition and fame so much that he doesn't care if he gets caught for what he has done! If you missed the series, its not too late!!! All 6 parts of the film are available on Comcast on-Demand in the HBO section!
